Using a single extract for both approaches, data prioritization and ion mobility mass spectrometry helped identify previously unsuspected PFAS, expanding analytical coverage for food safety monitoring.

This article describes the analytical challenges of chemical exposomics in food safety. The need for high-throughput, multi-platform approaches—such as LC–HRMS and GC–HRMS with IMS—to capture the full spectrum of potential contaminants in our food supply is emphasized.

The advantages provided by the implementation of ion mobility spectrometry (IMS), and in particular travelling wave ion mobility spectrometry (TWIMS), in traditional liquid chromatography–mass spectrometry (LC–MS) systems are discussed.
