Adulteration of food and beverages is a significant problem involving many different edible products. Expensive commodity products, such as many fruit juices, can be extended by the addition of relatively inexpensive substitutes. The high cost of the fruit and the possibility of poor harvests conflicting with high consumer demand, makes the fruit juice industry particularly susceptible to this problem.
