A joint study made up of researchers from the Federal Ministry of Agriculture, Water Management and Forestry and the University of Sarajevo (Bosnia and Herzegovina) looked at how adding a small amount (1%) of dried algae (Schizochytrium limacinum) to chicken feed affected the fat makeup of the meat, particularly whether it boosted omega-3 (ω-3) levels, under real-world farming conditions. The goal was to see how much ω-3 built up in different cuts of meat, and whether that increase was enough to qualify for special nutrition labeling. Nearly 37,000 broiler chickens were split into two groups: one fed a standard diet, and the other fed the same diet plus the added algae. The researchers tracked how well the birds grew and performed, then tested samples of breast, leg, and wing meat to measure their fat content using gas chromatography (GC). A paper based on this work was published in the journal Poultry Science.1

Why and How is Chicken Meat Fortified with Omega-3s?

Adding ω-3s to chicken products is a practical way to help people get more of these healthy fats in their diet, since chicken is cheap, popular, and its nutritional makeup can be changed just by adjusting what the birds eat. Earlier research2 has looked at poultry as a good alternative source of long-chain ω-3s for humans. Normally, chicken meat does not contain much of the ω-3 ‘s docosahexaenoic acid (DHA) or eicosapentaenoic acid (EPA), but feeding the birds the right additives, like fish oil or marine algae, can boost those levels significantly.

What Are the Trade-Offs of Using Algae to Fortify Chicken Meat with Omega-3s?

Fish oil and algae are two of the best supplements for boosting the healthy ω-3 fats in chicken meat.3 But fish oil is becoming less popular as a long-term option because it is not very sustainable, so DHA-rich marine algae is seen as a better, more eco-friendly substitute. One type, Schizochytrium limacinum, is especially high in DHA and has been shown to work well at raising omega-3 levels in chicken meat. That said, there's a catch: feeding chickens too much algae can backfire. Even at just 2% of their diet, it can make the meat more prone to oxidation, which sometimes leads to off flavors, particularly in thigh meat.4 Some studies have found that this oxidation stays within levels considered safe to eat, but to be on the safe side,5 experts generally recommend keeping algae under 2% of the diet to avoid influencing the meat's quality.5

Did Algae Supplementation Boost Omega-3 Levels in Chicken Meat Without Hurting Growth Performance?

The researchers found that adding the algae to the chickens' diet didn't change how much they weighed, how much they ate, how efficiently they converted feed into growth, or their survival rates, so the birds did just as well overall. But the meat itself was different: birds that got the algae had noticeably more ω-3 fats in every cut of meat, mostly because of a big jump in the ω-3 docosahexaenoic acid (DHA) (and, to a smaller degree, the ω-3 eicosapentaenoic acid [EPA}), two of the "good" ω-3 fats. DHA levels shot up roughly 11 times higher in breast meat, 16 times higher in leg meat, and 13 times higher in wing meat. Meanwhile, the amount of omega-6 (ω-6) fats (another fat type) stayed about the same, which meant the ratio of ω-6 to ω-3 improved, which was a benefit in the opinion of the researchers, since a lower ratio is generally considered healthier.1

Was the Increase Enough for Omega-3 Labeling Claims?

When you add up the EPA and DHA, fresh breast meat had about 26 mg per 100 grams, while leg and wing meat had about 90 mg per 100 grams. That was enough for the leg and wing portions (which were tested with the skin on) to qualify for a "high in omega-3" label. Breast meat, though, didn't quite hit the bar needed to be labeled a "source of omega-3."1

“Overall,” write the authors of the paper,1 “the present study suggests that dietary supplementation with 1% Schizochytrium limacinum may enhance ω-3 PUFA content in broiler meat under commercial production conditions without compromising performance, and may contribute to improved nutritional value of poultry products.”
